I love Earth Day but this year I am sadly behind in preparations. So we will get to our fun stuff later this afternoon after a doctor appointment. We did start the day off with a delicious Lemon-Blueberry Loaf drizzled with a warm lemon/sugar mixture. You, too, might have the ingredients at home to whip this up. Highly recommended.
